Apple Cinnamon Protein Waffles

1 scoop (34g) BPN cinnamon roll whey protein powder

¼ cup (30g) all purpose flour

Pinch salt

¾ tsp baking powder

¼ tsp apple pie spice

¼ tsp. cinnamon

½ cup (120g) unsweetened applesauce

1 whole egg

½ tsp. Vanilla extract

Apple Topping

½ large granny smith apple

1 tbsp. Light butter*

¼ cup sugar free maple syrup*

Cinnamon to taste

*Can also use regular pure maple syrup and regular butter for the apple topping depending on calorie needs.

  1. Preheat waffle iron to medium heat. Add all ingredients for the waffles to a bowl. Gently stir together until a smooth batter forms.
  2. Spray waffle iron with nonstick cooking spray. Divide the batter between 3-4 spots in the waffle iron (or 1 large waffle with a Belgian waffle iron). Cook for 5-7 minutes or until the waffles are golden brown.
  3. For the apple topping, heat butter on medium/high heat in a pan. Chop apple into small cubes, and add apple and maple syrup to the pan. Cook apples in butter / maple syrup for about 6-8 minutes. They should be tender, but not mushy. Add cinnamon to taste.
  4. Top waffles with cooked cinnamon apples and enjoy!
