Protein Snickerdoodle Cookies


¾ cup (90g) all-purpose flour

1 scoop (34g) BPN Cinnamon Roll Whey Protein Powder (or Vanilla)

½ cup (64g) peanut flour (PB Fit or PB2)

2-3 tbsp stevia / natural sweetener (more or less to taste)

½ tsp baking powder

¼ tsp salt

½ tsp cinnamon

1 whole egg

½ cup (120g) unsweetened applesauce

3 tbsp (42g) light butter

1 tsp vanilla extract

Cinnamon Sugar Coating

½ tbsp ground cinnamon

3 tbsp granulated sugar (or sugar substitute) 



  1. Preheat the oven to 350F. In a large bowl, mix together: flour, protein powder, peanut flour, sweetener, baking powder, salt and cinnamon. Add egg, applesauce, light butter, and vanilla extract. Mix until a thick dough forms. 
  2. Add ground cinnamon and granulated sugar (or sugar substitute) to a bowl. Scoop dough into 8 balls. Roll in the cinnamon-sugar mixture. 
  3. Place on a cookie sheet. Press each cookie dough ball down slightly with your fingers or a fork to flatten. Bake at 350F for 8-10 minutes. They cook quickly, so don’t forget about them. Enjoy!
